When I write email, how do I change the default from "paragraph" to "body text"?
"paragraph" does not work for me when I'm writing an email message. I would prefer "body text" but have not been able to make it the default.

Go to Tools|Options|Composition and you should be able to find a checkbox for paragraph mode. Click it to toggle it to the opposite state.
