Will all bookmarks and passwords be saved on Mozilla if you udate OS?
If I update my Mac OS will I have all my settings saved on Mozilla where I signed up for an account or do I have to save this data myself, remotely?

Yes your data will be saved on a update.
Your settings is in a separate plate from the Firefox install. The Firefox Accounts is not a backup service.
To make sure you have your Bookmarks and other settings after a OS update, you may want to backup your Profile(s). https://support.mozilla.org/en-US/kb/back-and-restore-information-firefox-profiles
