I know how to link a web url, but I cannot find a way to link an email address in the body of an email. I want the recipient of my email to be able to click on the email address that is displayed in my message and have it open a new email to that address on their computer like I have done in every other mail software. Thanks in advance for your help.

Just type it in with the correct email address or URL format and it will be a hot link when received. Thunderbird does not activate addresses or links in the Write window so it is easier to edit them. Save the email to drafts or send one to yourself and you will see that it works.

Highlight some text in the message body, Insert/Link (Ctrl-L), enter mailto:somebody@domain.net in the Link Location box.
