How do I go back to a previous version of FF if the new one breaks things I need?
Some of the sites I use for work may not work with the new version of Firefox. What would the process be to roll back the installation to an older version so I can retain that functionality?
Also, if/when I upgrade, are all my cookies kept or will I have to re-enter all my login credentials that I have scattered across the web?

Settings passwords etc are normally kept when you upgrade, but make sure you do not use any option saying something like remove personal settings, because that removes all profiles and bookmarks passwords etc from all normally installed versions of Firefox.
You should be using Firefox 7.0.1 or the older 3.6.23 the intervening versions such as firefox 4 are no longer supported, and not considered secure. You could put your system and personal data at risk by using them.
If only certain sites need a legacy version consider using Firefox 7 for day to day activities, and portable for other sites. See
I can do a portable. I need to ask the administrators on my work sites if they support FF7 yet. Day to day activities are my work. I'm freelance.
