You do settings changes for addon through the Addon setting and have to click each addon to st their settings.

Not all extension have a section on its Add-ons page. You can try to left-click or right-click its toolbar button.

I can vouch for uBlock Origin. In Add-ons and Themes, click the 3 dots alongside the extension name and select Preferences. You may find something like that or Manage for other add-ons.
