I think that's a function of your operating system. The files will be saved with the eml extension, and the OS will apply to those the icon associated with your default email client. If you saved them as HTML then I'd expect them to be given the icon that represents your default Web browser.

However, look to the tools offered by your OS for file associations and default applications. It may allow you to choose an arbitrary icon. I wouldn't do it myself, because these eml files will still require an email client to open them and make sense of their contents.
