Have you reviewed those settings in Thunderbird? You may not have changed them, but I have a theory that when Thunderbird updates, settings can be forgotten and then they change back to defaults.

Alternatively, are you able to stop using Thunderbird for one day (resort to webmail for the duration) and see if this still happens? If so then maybe it's something you need to take up with your email provider.
