in the new Thunderbird version (78.2.2), when writing a new e-mail, you can not press the Enter key to create a new line for each recipient address.

Can you change this?

Not without reverting to v68. You should still be able to add more recipients in the new version as described here https://support.mozilla.org/en-US/kb/addressing-email

Yes I know, but it would be nice if we at least had the option.
