I love thunderbird and how well it runs on Linux. I am now wondering. If I install thunderbird on my android phone, will google/android be able to read and look at all my emails?

To my knowledge, Thunderbird is not yet available for Android. On your general question, any functioning email client that works with Android will be able to read, write, and respond to emails.
