what is the use case for Firefox Profiles and User Profiles and how do they difer?

It's a bit confusing but there probably was a reason at some point in time,.

They are basically the same thing. User Profiles is the old legacy manager. Firefox Profiles is the shiny new profile switcher. It's built for everyday use so you can easily separate work and personal browsing with cool icons.

I'd advise against removing that. While I also find it somewhat confusing that even out of the box it comes with the unused "default", there might be things relying on it. (E.g. the update functionality perhaps?)

Maybe someone more knowledgeable will confirm it's safe to remove it, but since the browser comes with it from the factory I'd generally recommend leaving it in place, albeit unused from the consumer perspective.
