I want to look further back than a week in my history. is that possible?

press CTRL + SHIFT + H -> Library window will open -> on the left-side double-click History -> Now you can see your whole Browsing History

Check and tell if its working.

That will be History > Show All History on a Mac

If you do not see older history then make sure that you do not use Clear Recent History to clear the Browsing History when you close Firefox.
