On the list of how to handle applications, how do I delete some of the entries?

It doesn't appear you can unfortunately. I'd love to be proven wrong though

Definately not trying to prove "evhenry" wrong (they just might be right !), but I was thinking :
Under "Content type" choose the one you want to edit; then under "Action" click on the little arrow and choose "Application Details" - on the dialog that appears you'll get the option to remove it.
Is this what you want, or does it not even come close ?

If you are comfortable with editing files in JSON format then you can check handlers.json in the the profile folder or possibly rename/remove handlers.json to reset all file actions.
You may wan to open handlers.json to verify that the file is still valid JSON.
You can use the button on the "Help -> Troubleshooting Information" (about:support) page to go to the current Firefox profile folder or use the about:profiles page.
