Old account remenants
When selecting which email account to send FROM, the drop down shows a number of old email accounts. These accounts have been deleted. There are no details showing under the "account settings" or "Outgoing server." Which file stores the mail server information and where is it? I currently have around forty different email accounts across five mail servers.

If the accounts have been deleted and do not appear in 'account settings' pane, then click the 'outgoing server' like from left sidebar after clicking the 'account settings' pane. that would show any SMTP servers that are still set up.
Maybe you should look in file prefs.js in your profile to see
