I have 3 Gmail accounts that I like to keep open most of the time. I'm trying to migrate from Chrome, which lets me have different profiles in separate browser windows. How can I keep my different email accounts open? When I add one, the first one closes.

Multi-account containers could be a good solution for what you are trying to do. This support article should help:
