My Thunderbird appears to have "upgraded" to 91.5.1 overnight and now appears as a new installation, ie my accounts have disappeared and I am invited to set up a new account.

First, you may want to update the setting for update to not do it automatically. That setting is at Tools>Settings>General. Next, your files are likely there. New installs sometimes get 'lost'. Your profile is probably still at c:\(yourname)\appdata\thunderbird\profiles with a name such as 123456.default. I am using windows 11, but the next steps should be approximate: click windows icon in tray, type run or whatever brings up command line prompt. Enter thunderbird.exe -p and press enter. That brings up Profile Manager. Click 'create profile' button and scroll to your profile, select it and give it a name in profile manager, such as MYPROFILE. Continue to TB and all should be okay.
