Make "Body Text" default in Thunderbird 78 on Ubuntu 21.04

I just added a new HD and installed Ubuntu 21.04 with Thunderbird 78.13.0. When composing an email, 'paragraph' mode is the default and I want to change it to 'Body Text'.

I've searched Mozilla Support and when someone has asked the same question, the answer is to go to Tools > Options > Composition > General. This menu setup doesn't exist in my version.

When I click the menu on the top right of the Thunderbird window, Tools is one of the menu items but when I click that, there is no options or composition item. This is so frustrating. Where do I go from here?

Just to match the Linux world, options has been renamed to preferences. Now follow your original instructions on changing the setting now you know where to find them.

This should have been obvious. I'm not a noob but am 75. Maybe that explains it! Thanks so much.
