Clicked on reset folders - mistake. Lost folders & emails. Can these be recovered?
I now have an In box & 1 sub folder. Still have Trash, Sent, Junk, Saved and two folders (with very little in them). Have emails in Trash going back to 6/2017 that were port of the now lost folders. Seems like there should be more out here. UGH!

Then I'd probably try to recover what's in Trash. Having said that, messages are not moving to Trash just by themselves. How did they get there in the first place?

I guess so. But since you didn't mention what more should be out there I'm not going to speculate.
In any case, you can always restore stuff from a recent backup assuming you did create one in the first place. https://support.mozilla.org/kb/profiles-where-thunderbird-stores-user-data#w_backing-up-a-profile
