A certain internet site has my name and a posting that I did in twitter 2 to 3 years ago. This certain site picked it up along with added information that's not mine. I want that site to delete my name but it is asking my email address. How do I know this site is legit?

That's a difficult question to answer, because why are they publishing old tweets in the first place? Since we don't know what site it is, you might search around for stories about the site to see what other people are saying about it.

It seems they capture information about the Twitter account that users might not realize is publicly available.

According to a whois search, the domain was registered in July 2014 and the owner's name is hidden by an anonymity service.

It's hard to tell whether it's safe to give your email, but based on their contact page, it doesn't need to be the email associated with your Twitter account. You probably could create a new "throwaway" email account for this purpose.
