How can I return to the previous Firefox - I hate the new version that just installed itself without asking and hides or deleted all the stuff I used?

Firefox deleted the old version which I liked and then updated itself without my permission to this new version which I hate. Why??? Stuff that was easy to access is now hidden or seems to have been deleted. This new Firefox is a backward step. How do I return to the previous version - other than via a System Restore - without losing all my bookmarks etc etc. And if I can do that, then how do I stop Firefox re-installing this horrible update?
