After the one of the update to firefox a while back my browser has been restoring my previous session after I close firefox or even turn off my PC.

I have always had it set to start up on my homepage (youtube) since I first started using firefox many years ago and I was wondering what has chanced?

Either Firefox is crashing every time you close it (seems unlikely) or your setting is being overridden. The most common way it gets overridden is if external software creates or edits an optional settings file named user.js.
