I want visited websites to have a different appearance from un-visited websites.

In most search engines, an unvisited link appears blue, but a visit link appears purple. However, this setting is entirely controlled by the website, not Firefox.
Are you enabling browser history?
To see all History and Cookie settings, choose:
- Options/Preferences -> Privacy & Security
Firefox will: "Use custom settings for history" - https://support.mozilla.org/en-US/kb/Options+window+-+Privacy+panel
