Every time you upgrade Firefox it goes through all the incremental version instead of updating directly to the latest version. Very annoying. Any reason for this or just lazy programmers?

Can you be more specific? What version did you have, and what intermediate version(s) did Firefox install?

If you don't restart Firefox very often, it's possible an update was "staged" in a temporary folder quite a while ago and as far as I know, Firefox will complete that update before checking again.

Any version to any other version. Just before had a remote PC that had version 45 installed. First update went to version 47. Next update to version 49. Next to version 56. And finally went to 59. 4 updates, each one of them downloading 40-50MB of data.

these are so called watershed builds that make sure you're not being updated to a version that breaks on your system - since developers can't look into the future and requirements change over time, this is necessary. if you want to get to the latest version straight ahead, you can download it from getfirefox.com

the watershed at firefox 47 was put in place to weed out affected users with a particular third-party software that would instantly/repeatedly crash after the update. the next version was there because support for some very old processors was dropped and there was code added to provide the update only to users whose system could still run firefox. firefox 56 contained the code to switch eligible users over to win64 builds of the browser...
