have sites not compatible with Firefox. How do I use Firefox as default and still be able to use the other sites?

I would like to continue to use Firefox as my default browser. However several sites I use regularly only support the "other" browser. Is there a way to identify those non friendly sites and have them open in different browser?

Not really. Some outdated sites might have a "Best experienced with Internet Explorer" note around somewhere, but even those might work just fine in Firefox.
