Setting Firefox as default through Options isn't working. I'm getting asked to make it default browser when its already checked. So, I followed instructions on here and went to Set Default Programs in Control Panel. There, on the left side I find (3) Firefox logos. Yet, under Programs (where you can delete programs) it only shows (1). I'm thinking maybe this is why every few weeks I have to go through this. Don't know what to do.

No idea for default other than : uninstall Firefox. Then Delete the Mozilla Firefox Folders in C:\Program Files and C:\Program Files(x86) Then restart system. Then run Windows Disk Cleanup. (Note: This should be Pinned and run Weekly, If never done below expect 10's of gig's) Then run it again and click the button that says Cleanup System Files. Note: your Firefox Profile is saved. But you should make a back up before you do :

Reinstall with Current Release Firefox 57.0.2 with a Full Version Installer

As for the multiples you see that is what 57 does as per Quantum https://www.howtogeek.com/332449/whats-new-in-firefox-quantum/

If having issues with using to much ram or processes can reduce the number if is needed.

Try the reinstall to stop that though that sounds more like a Microsoft issue trying to gain control or took control.

Please let us know if this solved your issue or if need further assistance.
