When sending an email how can I remove the email address from the “To” & “From”?

Yes, and if Outlook makes you think the addresses were really not included in the message, it was lying. It hides things, giving the impression that the hidden items are not present, leading to a false sense of security on the part of the user.
Send me a message using Outlook and I'll show you the addresses hidden in the message headers.

No. Email servers need this information.
You may have used clients that appeared to do this, but they were lying to you if they led you to believe that this data was not put into your messages.

When using Outlook as my mail client the addresses do not show.
