Would like to compose emails in a new tab rather than a new window. I haven't found this in the options or in Add-ons. Am I missing something, or is it really not possible?

It is really not possible. It has been on the development list since Version 3, but it is a huge undertaking. Bigger apparently that replacing the address book.

There have been a couple of attempts, one was an addon that after a lot of work the author wrote "it is barely useable" and not integrated with Thunderbird spell check and other features.
