It looks like this:
From: me <senders e-mailadress> Subject: test To: me <my e-mailadress>
I want to remove that "me" but how?

In 'Address Book':
Locate your email address in the address book (it might be in more than one address book) or if not in any address book, do the following.
- Add you as a contact in eg: Personal Address Book.
- Where it says 'Display' enter your name as you want it appear.
- then select 'Always prefer display name over message header'
- click on OK
