I can find nothing online to tell me whether migrating from Windows 7 to Windows 8 will cause me significant problems in running FF (latest beta version) with extensions. Is this likely to be a major, minor or non-issue?

I can't promise on any extensions, they are developed by third-parties, but I'd guess most of them would work. Please note that Firefox does not yet officially support windows 8, so there may be some minor glitches until it does.

Normal Firefox extensions that do not have binary components should work on any computer platform including Windows 8 unless otherwise stated.
Note that not all extensions may work with the current Firefox 17 beta release or may get broken with a next beta version.
If an extension has binary components then they may need an update to work properly on Windows 8.
