That setting is under Edit/Preferences(Win:Tools/Options)/Display/Advanced. Some versions of Linux don't clearly delineate the Formatting, Tags and Advanced tabs of Display options:

Sorry, should have mentioned I'm running Xubuntu 18.04.2. Attached the preferences picture but couldn't capture the Edit link as there is no Preferences link within that one. Well, tried to attach but spins continuously.

Correction! Just noticed the the 3 tags! Completely 'invisible' since they aren't underlined of bolded as you said!

The Preferences (Win:Options) can be displayed in a tab, instead of a window, which might make them more visible, by double-clicking the pref. mail.preferences.inContent to true in Edit/Preferences/Advanced/General/Config. editor.
