Can I delete segments/parts of an email without it deleting the entire email?

When I attempt to delete a specific part of an email such as email names/etc or a sentence as an example it deletes the entire email. In my previous mail program I could high light the item to be deleted and it deleted only that which was high lighted and not the entire email. Thanks
