Firefox is my default browser, but it insists it isn't.
Not only when I open the Preferences, but now in the snippets too :) Thing is, I tried. Look:
KDE neon 18.04. And of course, it does work as such. It just _insists_ it's not default. Big deal? No. Mildly annoying? Well, yes :)

Oh, OK, accepted. Sorry about the tone.
Note that the default browser isn't only about opening HTTP and HTTPS links, but also about some supported Firefox and possibly other cases. Firefox checks them all and if one isn't set to Firefox then this warning is shown.
You also use Firefox from your Ubuntu repositories and this version may behave differently.
Well, is there any reasonably simple way I can check those "some supported Firefox and possibly other cases"?
Because I would rather be using Firefox from the repositories.
