font changing from what I have selected! how can i prevent this/reliably set font?

I have set every possible option to have my font be papyrus….it looks fine when I am typing, but when I cc myself on a message, it is coming in as a san serif font….not sure which one! How can I reliably set the font for my outgoing messages?? Thanks for any help in solving this!
