Your Main question:

The Google Toolbar is no longer supported by Google in Firefox 5 and up, you may be able to get what you want from it for a limited time, the directions to install the Google Toolbar were posted before Google actually announced dropping support.

In any case you can find several alternative solutions, and you can start working on them now, see

Your secondary question:

The Stop and Reload buttons are combined into one button you can separate them out again through customize Alt+View+Toolbars > Customize

The need to save tabs when when you close has been removed, you can use the History menu item to restore your last session and your last tabs whether you asked ahead of time for it or not. But you can have the old way back where you indicate you want to save your tabs.(item #31)

You can customize Firefox so it would be difficult to tell the difference between version 3 and version 5

You can make Firefox Firefox 5.0 look like Firefox 3.6.19, see numbered items 1-10 in the following topic Fix Firefox 4.0 toolbar user interface, problems (Make Firefox 5.0, or 4.0.1, look like 3.6). Whether or not you make changes, you should be aware of what has changed and what you have to do to use changed or missing features.
