I want to move old Gmail emails off site & delete them from Gmail. I think what I need to do is archive them to another drive, then Thunderbird will still know where they are at & search for them. Is this correct?

You're mostly right: - click account settings for the account, and then the synchronization&storage menu to check the advanced tab that the desired folders are available for offline access - then, click file>offline>download to ensure all messages are download. - from here, I suggest exiting thunderbird and copying to external media via windows file explorer and then copy to the Local Folders section of the profile.
