I have had it in my previous email accounts before where I just type and it auto fills even if they weren't in my contacts, just previous recipients and emails from my inbox, is there a way to do this?

The auto complete does not search your email headers, it will look for any contacts in any address books that match what you typed. As you type more letters the filter reduces to provide better matches.

Is it possible that you do not have emails saved in the 'Collected Addresses' address book? Do you collect all outgoing email addresses that you have not saved in other address books?
