When I click "NEW" a preset formatted - stationery appears - with my closing comments, name etc. I want to change that and can not seem to find the menu that allows me to do so. Grateful for any help.

Firefox doesn't do email, it's strictly a web browser.

If you are using Firefox to access your mail, you are using "web-mail". You need to seek support from your service provider or a forum for that service.
