Go to the settings, general, fonts and colors and see text is black and background is white. Yet when I return to inbox text is white and background is black. Why is that the case?

could it be that the author of the email specified a background color and a font colour in the HTML they sent you?
Is the box for system colors checked? Are you using a dark theme?
