So why can't Firefox make their bookmark system more simple? I can spend 10 minutes looking for a bookmark that I KNOW I have & end up just googling for the site.

You can search for the bookmark if you know the name or URL. In Firefox 96 and newer you can right-click a bookmark search result and click "Show in Folder" to locate a bookmark in the folder list.
