Why is Firefox forcing this upgrade on me?

I hate the new upgrade so I downgraded to 56, also changing my settings so that any upgrades must be cleared by me. Next time I fire up the computer it's the new version. So I downgraded again, this time making sure to check the box for 'never check for updates'. Yet it has happened again - what is going on? I've not known a software update force itself on you like this since Windows 10. (which I don't use either, btw)

Check if "Mozilla Maintenance Service" is installed. You should be able to find it's folder under Program Files, next to Firefox itself. You can uninstall that service (uninstaller executable is inside the folder) without uninstalling Firefox itself.

First, Type about:preferences#advanced<enter> in the address bar. Under Advanced, Select Update.

[v57+] Type about:preferences#general<enter> in the address bar. Select Update.

Select Never Check For Updates.

Nothing like that on my computer. Running Win 7 Pro. As usual, the easy answer never works for me. I should know better. Off to the repair shop.
