Note: Some software, like Advanced SystemCare with Surfing Protection, can protect files in the Firefox profile folder against changes. If you have such software then check the settings or uninstall this software.

In the event that the passwords information is lost, you should record all information in a separate text file somewhere else on your hard drive, or written down. You can easily copy and paste if you need to do so. If you are concerned about someone else looking at that file, you can compress it using a password.

That is all great but does not even address the question as to why the logins and passwords are disappearing no matter how often I enter them. What has changed in firefox that is causing this new behavior

Sometimes an extension may cause issues with the passwords disappearing.
Should you loose your passwords again   (sure hope not   !);   let us know and we'll try   Firefox in Safe Mode.
But for now:   let's hope this won't happen again   (fingers crossed)   !
