that is a setting in either apple mail (check it is default) or OSX. It is not a Thunderbird option.

Not Correct. When I go onto Apple Mail it shows Thunderbird as my default email. I can change it in the window but once closed it reverts back to Thunderbird. Additionally the newsfeed and other options are greyed out.

Matt is correct, the default programs used by your OS are not set up in Thunderbird. Thunderbird can only check to see if it is default after being run.

So if you cannot choose the default programs in your OS then it is not a Thunderbird issue. Please read info at this link:

Although they used 'Outlook' instead of thunderbird, they have the same issue. Also this thread may be of use:

Should you get it sorted and use Apple Mail as default, it might be useful to stop Thunderbird auto checking everytime you access it. Have you unchecked the option to force Thunderbird to check if it is default? Thunderbird > Preferences > Advanced > 'General' tab uncheck 'Always check too see if Thunderbird is the default mail client on startup' click on OK
