How can I trust addon from unknown user ?
During the installation Thundirbird warns me about the risk of trusting addons from unknown user... so is there any way to find out if it's gonna be safe or not ?

If in doubt only install add-ons from AMO. https://addons.mozilla.org/en-US/thunderbird/
They are signed and have been reviewed. While this is not a 100% safety guarantee, it's the best you can get.
With add-ons from other sources it's really your call to decide whether you want to trust it or not.
