My PC is running Windows 10 Pro 64 bit. Ever since the latest Firefox major upgrade, I have been unable to set Firefox as my default browser. I know the official ways to do this, either via settings or via Control Panel, however when the window comes up and shows that Edge is set as the default and then I highlight Firefox, it does not save my selection. I am not set as Administrator as this causes Windows to ask if I want to allow Firefox to run, each time that I start Firefox, which is annoying, but even if I am set as Administrator, I still cannot set Firefox as my default.

One other has this current issue. Sounds like you are doing things as you should to change that. I expect there is some corruption of files in that area due to it refusing to change (or MS playing games again) As for it always asking that is because of Microsoft UAC https://msdn.microsoft.com/en-us/library/windows/desktop/dn742497(v=vs.85).aspx I can not stand the thing myself and is turned off. I use other protection.

Windows Spring Creators Update will be released in April and am sure it will be fixed then.

You can try this : *Repair System Registry and Files Find the Dos Prompt Right Click and Run as Administrator then : Copy/Paste to Dos Window : DISM /Online /Cleanup-Image /RestoreHealth then hit Enter then Reboot when finished. Note : DISM goes up to Microsoft for new ones.
