Outgoing SMTP servers not available in from field

I've set up an SMTP relay with SendGrid and have added it to as an Outgoing SMTP server, but there's not password challenge and it does not appear in the from options when I go to send an email. Is there any way to do this? I have three standard email accounts set up which all appear normally in both the SMTP selection menu and from dropdown.

it needs to be done through the main page, not through server settings
