I am on Ubuntu 20.04.5 LTS and really dislike when Firefox updates and I am in the middle of some work and I get this "Firefox has upgraded in the background and needs to restart".

I enjoy my privacy, so I start my browser with the "Delete cookies and site data when firefox closes" and "Always use private mode" set. This means when the browser restarts, everything is gone.

Why can't this be disabled? My laptop checks updates every day and I install them. Why can't I get a notification that an update is available so I can download and install at my choosing?

You appear to be using Firefox from the Ubuntu repositories and this means that Ubuntu software management controls the Firefox updates and thus you can't fix this in Firefox. If you want more control then consider to switch to Firefox from the Mozilla server.

No other updates from the repository update without a promot. This includes all Ubuntu, chrome, etc updates. Firefox is the only app that not only downloads the update, but also installs it without prompting.

That only works with the official Firefox builds (for Linux) from Mozilla and not package or third-party builds.
