I have been using Adblock Plus for years now. Currently I wanted to install it for another Laptop noticing that it has permission to access all the website data. Can they also send this data to their servers? Of course they say they don't: "What kind of personal data do we process? [...]

   Operating system
   Date of last update
   IP address
   Additionally, you may manually submit the following information about a web page with a bug using the Issue Reporter: URL, blockable items, matching filters, active filter lists (voluntary)

We don't provide information about addons on this forum. Addons are developed and maintained by third-party sources, so you should direct your question to them.

However, I will provide a little information since I am a Firefox addon developer myself. The reason that Adblock Plus has access to website data is so that it can actually block the ads on the website. Without that permission, the addon won't have access to the page.

This does allow the developer to collect information about you and your browsing habits. I don't know the extent of what this specific addon collects. However, most addons only collect statistical information about your system (country, browser, operating system, etc) so that they know which platforms are the most popular.
