There are two "views of the message lists.
One is the old list view which has now been called table view. This is sorted by simply clicking on the date heading in the list. Each click reverses the sort order of messages in the list.
The second is the card view. This new feature has no heading so you have to use the File strip icon beside the Quick filter button
The menu offers a sort option.
This same menu can be used for the list view, but it is a number of extra steps to get the exact same result.
Each of these options is on a per folder basis and there is no option to change all existing folders globally.
You can change the default for new folder by modifying a preference in the Config Editor as discussed here https://support.mozilla.org/gl/questions/1422833.
That "file strip" in the Quick Filter menu does nothing but bring up the Quick Filter menu. I don't get anything about changing defaults there (Thunderbird 128.6.1esr). The Message List display options have no "default settings" options and don't seem to be reliably sticky for me.
If you switch to Table View, there are options in the "Select columns" dropdown list that let you "Apply columns to..." and "Apply current view to..." that allow setting the options of the folder and its child folders. But those options are not available in the Cards View. I don't understand why they aren't available in both views. You can switch back to Cards View after making and applying changes, but it doesn't have the columns you selected in Table View. It seems to save the Sort Order, though.
Performing a Search always reverts to whatever the factory defaults are, i.e. threaded ascending order by date.
A global setting feature would be quite welcome.
