Firefox 91.0 is currently in release candidate build 1 (RC 1) state to prepare for the next update.
In RC state Beta behaves the same as release, but is should still say update channel Beta.
Once 91.0 has been released and the first 92.0b1 version has been released, you will be updated to 92.
DE doesn't update during this release candidate stage and thus stays at the last beta version until it updates to the next major release (92).

</p><p>According to the Help-&gt;About box, it says that I'm on 91.0, not 91.0b. (And it doesn't mention anything about being on the beta channel.)

This is currently the case with 90.0 beta that no longer shows as 90.0b12, but as 90.0 release.
If you actually had DE and not beta then updates would have halted for a while until the first 91.0b1 version would be released.
So it looks that you do not have a Developer Edition (aurora update channel), but have a beta version (beta update channel).
To switch the update channel, you need to install the full version of the release you want.
