Firefox keeps rolling back to previous version no matter what I do

I have Firefox 105.0.2 (64-Bit) installed on my Macbook. I have turned off the automatic update function and checked that it is set to false in about:config. Nonetheless, about 2 or 3 times a day at seemingly random times, Firefox will suddenly stop loading websites and instead show me the message "An update was installed, please restart Firefox to keep using". When I restart Firefox, the application forces me to create a new profile because the current profile is 'not compatible with older versions of Firefox', and then when the browser finally starts up, it shows that it has rolled back to the version 104.X.

I then have to manually reinstall the 105.X version update and manually reactivate my profile in about:profiles to continue using Firefox with my bookmarks etc.

This is wildly frustrating and slowing down my work. I feel like I have tried everything: I have done a full uninstall/reinstall twice, run FF in safe mode, run the 'Clean up Firefox' tool... I am hoping there is another potential solution I have missed as I would hate to have to stop using my favourite browser :'(
