In Firefox 56 the PreferencesUI has changed, as you have obviously noticed. You can get the 'old' Options (Advanced etc.) back, if you want to :

Type in the address bar about:config (press Enter) (promise to be careful, if asked) Type and look for the preference : browser.preferences.useOldOrganization and set its value to true

However, you could use the 'new' Preferences - it'll just take a little getting used to. There's this 'Type in Options' box, where you can type what you're looking for.

By the way, the new Options/Preference page has a search box at the upper right. If you are looking for, say "cache" or "proxy" then that box should scan all the panels for the relevant settings. Hopefully a faster way to find things in the future. If you discover problems with the search feature, feel free to report them so they can get fixed.
